In what order is the vinegar and soda added to a Red Devil’s Cake batter???
When I made this cake, I added the soda and then the vinegar as the recipe states; it caused a chemical reaction and foamed up over the sides of the mixing bowl. I am wondering if the soda should have been put in the dry mixture and the vinegar with the wet mixture??? Please help.
This should read: Red Devil’s Food Cake Batter.
It helps with leavening and makes for a very tender cake. Normally with the red velvet cake – you add soda and vinegar and then don’t beat the batter much, just blend. This is all terribly scientific.
Baking soda (a base)
Vinegar (an acid)
–get a bubbling reaction when combined and start reacting to produce carbon dioxide bubbles which acts as a leavening or rising agent for the cake.
The liquid acid like buttermilk also reacts with the baking soda to produce bubbles, and the vinegar helps make a tender texture (prohibits gluten) so all this chemistry in action helps make the texture of your cake just right. Below are some interesting links – not really sources – one has tons of recipes for this cake, the other a recipe that tells you how to get the “red” without the artificial red dye. Good baking!
