Best Ever Corn Fritters
Description
Crisp, tasting corn fritters goes great with barbecue. It is a wonderful dish that has great flavor. A light soy or teriyaki sauce is a great accompaniment to this recipe. Use the freshest corn possible to extract the most intense corn flavors. It is also a great dish to accompany other Asian dishes. Once you try one corn fritter you will have a very hard time not eating many more.
Ingredients
* 1 1?2 lb fresh corn (3-4 ears)
* 1 large egg, beaten lightly
* 3 T all-purpose flour
* 2 T heavy cream
* 1 small shallot, minced
* 1?2 t salt
* cayenne pepper
* 1?2 c corn oil
* 3 T cornmeal
Instructions
1. Using a sharp knife, cut kernels from 1-2 ears of corn and place in bowl to make about 1 cup whole kernels. Grate kernels from remaining ears on large holes of a box grater to yield 1/2 cup. Using the back of the knife, scrap any pulp remaining on all cobs into bowl. Make sure you capture all the liquid and all the corn.
2. Stir in egg, flour, cornmeal, cream, shallot, salt and cayenne.
3. Heat oil in large, heavy-bottomed, skillet over medium high heat until shimmering. Drop 6 heaping tablespoons batter into pan. Fry until golden brown, about 1 minute per side.
4. Transfer fritters to a plate lined with paper towels. If necessary, add more oil to skillet and heat until shimmering and fry remaining batter.
5. Serve immediately. Light soy sauce or teriyaki sauce is a great accompaniment.

Can you freeze fresh corn on the cob without blanching first?
A friend of mine says that they shuck and then freeze their fresh corn on the cob. Everything I have read says to blanch and put in ice bath first before freezing. I am wondering if it is OK to freeze without processing! Thanks!
yes you can – just put some up last week from my in-laws farm. I like to snap ears in half for easier storage, but you can also cut from the cob & freeze for soups and sides this winter. Nothing beats a grilled ear of silver queen corn in my book!!
