How do I know when to harvest my shell beans from my garden in October?

my beans are full of shells and some of the deposits are striped brown and some of them are still green beans inside the helmet is white and I want them to freeze.

all non- would have to have stripes, but the most complete better.I get the raise, but let them dry, then shell, then put in freezer … I use mine pinto me
