Does it make a difference wrapping chicken breasts in foil rather than using an ovenproof dish with a lid?
Yes it does but you can cook chicken using either.
The ovenproof dish will help moderate and hold the temperature better, while aluminum doesn’t hold heat well at all.
Clay bakers work the best, followed by cast iron, porcelain, corning ware, granite, steel, aluminum, etc. Going down the line.
