The art of Crock Pottery?
Im looking for really good and delicious crock pot recipes. I love slow-cooking but I don’t always like feeling as if I am eating a big mumbo-jumbo whose flavors are all mixed together. Do you know what I mean? So I like recipes that are simple (like cooking the chicken breasts with apple slices and potatos and then having a side dish of veggies or something else later on). But I want the slow cooker to do most of the work and I just want clean fresh, decently healthy recipes. Oh and especially seafood recipes if you have any…i dunno if seafood is too strong a flavor to use in crock pots.

I don’t have any seafood crockpot recipes, but you can find some here: http://www.recipezaar.com/recipes/crockpot. Here are a couple other non-seafood recipes.
Vegetarian Enchilada Casserole
3-1/3 cups canned crushed tomatoes, in tomato purée
1-2/3 cups chunky style prepared salsa
6 oz. tomato paste
2 lbs. canned black beans, rinsed and drained
1 lb. corn kernels, thawed if frozen
1/4 lb. canned diced mild green chilies, drained
1-1/2 Tbsps. ground cumin
1/2 tsp. garlic powder
5 corn tortillas
2 oz. olive slices, drained
Combine first 8 ingredients in a bowl. Mix thoroughly. Pour about 1 cup of mixture into the bottom of an electric slow cooker on low heat. Spread evenly and top with 1-1/2 tortillas, cutting to fit pot. Spread 1/3 of remaining tomato mixture over top. Repeat layering process, ending with tomato mixture. Spread top evenly. Sprinkle with olives. Cover and cook about 5 hours. Serve hot.
Chicken w/Spinach
1 clove garlic, minced
1 tablespoon butter
1 tablespoon flour
1/3 cup milk
2 (10 ounce) packages frozen chopped spinach, cooked and drained
2(2½ -pound) frying chickens, cooked, boned and cubed
3 table spoons butter
3 tablespoons flour
¾ cup cream
¾ cup chicken stock
Salt and pepper to taste
1 cup grated parmesan cheese
Sauté garlic in 1 tablespoon butter for 1 minute, blend in flour and cook 1 minute. Add milk and boil 1 minute, stirring constantly, stir in spinach. Spread mixture on the bottom of a casserole; cover with chicken. Melt 3 tablespoons butter; add flour blending well. Stir in cream and broth slowly; season with salt and pepper. Simmer and stir with a wire whisk until thick and smooth. Pour sauce over chicken; sprinkle with cheese. Bake 400° for 20 minutes or until bubbly. Serves 6 to 8.
