What corn dish IS this??? Enjoyed at IMPROV in Addison TX?
They were served with the catfish dish. I mistook them for hush puppies. I was DELIGHTED when I munched into a crusty outside, soft with sweet corn little snack-em’s inside.
The word “corn puff” came to mind, but truly, I’ve never even heard that term before, just what popped into my brain.
What is this? Would love to have that recipe!!!

You don’t need a recipe for them — just a convenient Super Wal-Mart. They sell the same type of corn nuggets that are served in restaurants like Ponderosa.
The nuggets are in the freezer case, and the best way to fix them is to deep fry them so that they’re crunchy on the outside and soft in the center. I’ve also found that they’re great in my convection oven if I bake them, then use the brown and crisp cycles to finish.
